I hope you had a great weekend!

Lately, I've been prioritizing setting boundaries when it comes to working on weekends. It's been nice to take a step back from the constant pressure of content creation and allow myself to recharge. However, I've also realized the value of doing some preparation work to alleviate the potential overwhelm during an already busy week (feeling like I should've done some work this weekend--oh well!) I'm learning to find that balance.

Speaking of the weekend, mine was pretty low-key. I did a really fun themed spin class (Hip-Hop and EDM), went to "Italian Day," made a delicious Salmon Bowl recipe that I'm going to share with you, and BBQ'd some delicious meat from meatme

It was the perfect weekend to stay home and recharge, especially considering the upcoming weekends that are jam-packed with fun mini trips.

BBQ Salmon Bowl with Mango Jalapeño Salsa

When I find myself lacking inspiration in the kitchen, Half Baked Harvest's
recipe index always comes to the rescue. I had previously tried one of her salmon bowl recipes, and it was amazing! So, when I stumbled upon this new recipe, I knew I had to give it a try, and boy, it did not disappoint!

The dry rub used in this recipe was incredibly flavourful (the smoked paprika is KEY) that I couldn't resist recreating it for chicken thighs just last night.

Not only is this dish insanely delicious, but it's also super simple to prepare. It's the perfect meal for those summer nights, enjoying dinner on your porch and savouring every bite.

To personalize the recipe a bit, I decided to add some edamame beans and reduce the amount of rice. The combination was pure perfection.
